When life gives you six pounds of antibiotic/hormone-free ground turkey for a bargain and you don’t have any freezer room, you make meatballs! At least I do. The challenge? Getting them to be tasty, low-carb, and not fall apart. The result? A success!
These babies are very minimalistic because the idea is that you do whatever you want with them. Toss them in low-carb BBQ sauce, or if you like it spicy – Buffalo sauce! Serve them with spaghetti squash and marinara, or even put them in soup! (I did that last one and it was soooo good!)
The recipe makes approximately 64 mini meatballs, perfect for a party crowd or a large family, but you can adjust the ingredients to suit your needs.

- 2 pounds ground turkey
- 1/2 cup Real Mayonnaise
- 1 teaspoon garlic salt
- 2 Tablespoons Coconut Flour

- Mix all four ingredients together until well combined.
- Using a Tablespoon, measure out level scoops of the mixture, pop in into your hand and roll into a ball. *Tip: Wet your hands for easier rolling*
- Place meatballs onto a baking sheet lined with parchment paper or a baking mat.
- Bake at 375 degrees for 12 to 15 minutes, until just done in the center. (Do not overcook!)
- Remove from baking tray and serve however you want! They also freeze amazingly well!
