Easy after school snacks make my afternoons so much more peaceful, but where I really struggle is in the mornings. I’m not an early riser, though I do try, so we’re usually rushing to get out of the door on time. Having a simple, healthy breakfast that is ready to eat makes everything go so much smoother. Even better if the kids can eat it in the car, because usually that’s the only way we’ll make it on time to school. These breakfast pops are the perfect solution, and they are so quick to throw together the night before.
Just mix together yogurt and cereal, throw into mini cups or popsicle molds, garnish with a little more cereal and freeze! I used plain yogurt and added my own flavor and sweetener because I like to control the amount of sugar in our food as much as I can, but you could use already sweetened vanilla yogurt as well, and omit the stevia and vanilla in the recipe.
Your kids will be so excited when you pull these out of the freezer tomorrow morning!
